Fun Facts About … Tomatoes!

Oh, the blackberry!  The Farmers Market’s blackberries will spoil you forever when it comes to Did you know that the tomato was the original inspiration for all the fairy tales about poison apples?  Tomatoes are so acidic that they would leach lead out of the pewter plates used by the ruling classes and cause lead poisoning (the lower classes, who ate on wooden plates, were spared!).  Thankfully, we all evolved past pewter plates!  Can you imagine summer without tomatoes?  Beefsteak, roma, cherry, grape, heirloom, whichever you prefer, you will find them at Barrett Elementary School on Saturday, August 21, from 8 a.m. to noon.  And don’t forget your pre-orders for Saturday pickup!  We’ll see you at the Market!

RECIPE OF THE WEEK

Stuffed Tomatoes

Stuffed Tomatoes

INGREDIENTS

  • 6 large tomatoes about 3 pounds
  • ¾ pound Italian sausage
  • 1 onion finely diced
  • 4 cloves garlic minced
  • ¼ cup white wine
  • 3½ tablespoons tomato paste
  • ½ teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • 1 cup cooked white rice
  • ½ cup mozzarella cheese shredded
  • ¼ cup parmesan cheese shredded

INSTRUCTIONS

  1. Preheat oven to 400°F.
  2. Rinse tomatoes and cut tops off.
  3. Using a spoon, scrape out insides of tomato. Chop insides and tops.
  4. Cook sausage, onion, and garlic in skillet until no pink remains. Drain fat.
  5. Add tomato tops, white wine, tomato paste, salt, and Italian seasoning. Cook an additional 5 minutes or until most liquid has evaporated. Stir in rice and cook until heated through.
  6. Reserve 2 tablespoons mozzarella cheese and 2 tablespoons parmesan cheese for topping. Stir remaining mozzarella and parmesan into rice mixture.
  7. Place tomatoes in baking dish and fill with rice mixture (extra filling can be placed in pan next to tomatoes if desired). Top with remaining cheese.
  8. Bake 20-25 minutes or until tomatoes are cooked and filling is heated through. Do not overcook.

Spotlight on Blackberries!

Oh, the blackberry!  The Farmers Market’s blackberries will spoil you forever when it comes to blackberries.  Grocery store pints simply cannot compare to a fresh-off-the-vine blackberry from one of our farm vendors.  They are so sweet and bursting with flavor — amazing!  I love them with greek yogurt, granola, and just a dab of honey.  Or you can try them in pies, cobblers, cakes, salads, or even cocktails, or just eat them straight out of the basket they came in!  Kuhn Orchards is having a special — a 12 pint flat of blackberries for $66!  Too many for you?  Find a neighbor and share!  Blackberries are the star of the show at Barrett Elementary School on Saturday, August 7, from 8 a.m. to noon.  And don’t forget your pre-orders for Saturday pickup! We’ll see you at the Market!

RECIPE OF THE WEEK

Blackberry Peach Buttermilk Pie

It’s like summer in a pie!

Seared chicken with apricot sauce

INGREDIENTS

  • 1 package refrigerated pie crust (2 crusts)
  • 1 cup fresh blackberries
  • 1 1/2 cups peeled, sliced peaches
  • 1 1/2 cups sugar
  • 6 tablespoons flour
  • Pinch of salt
  • 2/3 cup buttermilk
  • 6 eggs
  • 2 teaspoons vanilla
  • 3/4 cup butter, melted and slightly cooled

INSTRUCTIONS

  1. Preheat oven to 350. Lightly grease a 10-inch skillet or pie pan.
  2. Let pie dough stand at room temperature for 10 minutes. On a lightly floured surface, roll one pie crust into a 14 inch circle. Repeat with second pie crust.
  3. Brush one pie crust with water.. Place the second crust on top. Transfer to prepared pan, pressing into bottom and up the sides. Crimp edges as desired.
  4. Layer blackberries in prepared crust. Arrange peaches over blackberries. Place the pie on a rimmed baking sheet.
  5. In a medium bowl, whisk together sugar, flour and salt. Mix in buttermilk, eggs and vanilla. Stir in melted butter. Carefully pour over fruit.
  6. Bake for 55-65 minutes, or until center is golden brown and set. Cool completely on a wire rack before slicing and serving.  Dust with powdered sugar or serve with ice cream or whipped cream.

RECIPE OF THE WEEK

Seared Chicken with Apricot Sauce

Seared chicken with apricot sauce

INGREDIENTS

  • 4 boneless, skinless chicken breasts, (about 1 1/4 pounds), trimmed and tenders removed 
  • ¾ teaspoon salt, divided
  • ¼ teaspoon freshly ground pepper
  • ¼ cup all-purpose flour 
  • 1 tablespoon canola oil
  • ¾ cup dry white wine
  • 1 medium shallot, minced
  • 4 fresh apricots, pitted and chopped
  • 2 tablespoons apricot preserves
  • 2 teaspoons chopped fresh tarragon , or 1/2 teaspoon dried

INSTRUCTIONS

Place chicken breasts between 2 pieces of plastic wrap. Pound with a rolling pin, meat mallet or heavy skillet until flattened to an even thickness, about 1/2 inch. Sprinkle with 1/4 teaspoon salt and pepper. Place flour in a shallow dish. Dredge chicken in flour, shaking off excess. (Discard any leftover flour.)

Heat oil in a large skillet over medium heat. Add chicken and cook until browned and no longer pink in center, 3 to 5 minutes per side. Transfer to a plate, cover and keep warm. (If necessary, cook chicken in two batches with an additional 1 tablespoon oil.)

Off the heat, add wine and shallot to pan. Return to medium heat and cook, scraping up any browned bits, until slightly reduced, about 3 minutes. Add apricots and cook until fruit begins to break down, 2 to 3 minutes. Stir in preserves, tarragon and remaining 1/2 teaspoon salt. Return chicken to the pan and cook until heated through, 1 to 2 minutes. Serve chicken with sauce.

The Lubber Run Farmers Market is pleased to welcome the new Cherrydale Farmers Market to the Arlington Farmers Market family!  Also a Field to Table-sponsored market, the Cherrydale Market opened two weeks ago at the Dorothy Hamm Middle School at the intersection of Military Road and Vacation Lane.  Now, don’t you go peeling off to another market just because it’s new — Lubber Run would miss you!  But if you have friends over there, let them know that they have a new option on Saturday mornings!  You, on other hand, should join us for all your farmers market shopping at Barrett Elementary School on Saturday, July 17, from 8 a.m. to noon.  And don’t forget your pre-orders for Saturday pickup! We’ll see you at the Market!

RECIPE OF THE WEEK

Petite Pasta Salad With Corn, Tomatoes and Feta

INGREDIENTS

  • 8 oz. salad-size dried pasta, such as small shells, farfalle, ditalini or tubetti
  • 1 lb. tomatoes, cut into 1/4- to 1/2 inch dice (1 1/4 cups)
  • Kernels from 2 ears of cooked corn (1 1/2 cups)
  • 4 oz. feta cheese, crumbled
  • 3 tbsp finely chopped chives
  • 3 tbsp finely chopped parsley
  • 1 tbsp balsamic vinegar
  • 2 tbsp red wine vinegar, or more to taste
  • 1 tbsp extra-virgin olive oil
  • Salt
  • Freshly ground black pepper

INSTRUCTIONS

Bring large pot of water to a boil over high heat.  Add pasta and cook according to package directions.

Meanwhile, combine tomatoes, corn, feta, chives, parsley, balsamic and red wine vinegars, oil, and salt and pepper to taste in large bowl. Toss to coat evenly; let sit for 10 minutes.

Drain pasta and rinse with cool water. Shake off any excess moisture, then add pasta to tomato-corn mixture. Toss to incorporate; add oil as needed.

Serve immediately, or cover and refrigerate for 1-2 days. Bring to room temperature before serving.

Zucchini Gratin with Yellow Squash

Zucchini Gratin

INGREDIENTS

  • 2 tablespoons butter
  • 1/2 onion thinly sliced
  • 1 small zucchini sliced in rounds 1/8 to 1/4 inch thick 
  • 1 small yellow squash sliced in rounds 1/8 to 1/4 inch thick
  • 2 large cloves garlic minced
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan
  • 1 cup shredded smoked gouda

INSTRUCTIONS

  1. Preheat oven to 450 degrees
  2. Melt butter in oven proof skillet over medium heat. Add onion and cook until the edges start to brown approximately 5 minutes. Add garlic and cook for additional 1 minute. Add cream and simmer until bubbly and starting to thicken. Slowly stir in parmesan. Add zucchini and yellow squash and cook an additional 4-5 minutes.
  3. Sprinkle with smoked gouda and bake in the oven for 15-20 minutes or until cheese is golden brown.

Grilled Ribeye Steaks with Farmers Market Salsa

Ribeye with Farmers Market Salsa

INGREDIENTS

  • 1 lb tomatoes
  • 1 white onion, peeled and sliced
  • 1-2 jalapeño chiles, stemmed and halved lengthwise
  • 2 large cloves garlic, peeled 
  • 1 Tbsp extra-virgin olive, plus extra for brushing
  • 6-8 sprigs cilantro, roughly chopped
  • 2 limes, divided
  • Kosher salt and freshly ground black pepper, to taste
  • Sugar, to taste (optional)
  • 4 (1½-inch-thick) boneless rib-eye steaks
  • Flaky sea salt (optional)

INSTRUCTIONS

  1. Arrange oven rack 6 inches from broiler.  Preheat broiler to high.
  2. Place tomatoes, onion, jalapeño and garlic on a sheet pan; brush with oil.  Broil 3-5 minutes per side or until charred (onions may take a little longer). Let stand until cool enough to handle.
  3. In food processor, combine cooled vegetables, 1 Tbsp oil, cilantro, and juice of 1 lime.  Pulse to form a chunky salsa.  Transfer salsa to a serving bowl; season to taste with salt, pepper and, if desired, sugar. (Makes about 2 cups.)
  4. Remove steaks from refrigerator 30 minutes before grilling.  Season generously with salt and pepper.  Cover loosely; let stand at room temperature.
  5. Preheat grill to high.
  6. Pat steaks dry; brush with oil.  Grill 5-7 minutes per side or until desired degree of doneness.  Transfer to a plate, tent with foil and let rest 5 minutes. Slice steak across grain. Sprinkle with flaky sea salt, if desired. Serve with salsa and lime wedges.

Beat the Summer Heat with …. Popsicles!!

The Farmers Market is a treasure trove when it comes to ingredients for homemade popsicles, perfect for bringing down the temperature as we head into summertime!  Try strawberry beet, sour cherry, peach ginger, blueberry and rhubarb, or tomato basil peach, or use coconut water and your favorite cut fruit for a pop that is as yummy as it is pretty!  And who says popsicles are just for kids?  Add a cocktail kick with strawberry winesicle, amaretto sour cherry, or blackberry apricot tequila.  The combinations are endless.  Or, if you’re just too hot to make the effort, skip the blender and try out one of the delightful sorbets from Ana’s Twist!  Beat the heat at Barrett Elementary School on Saturday, June 12, from 8 a.m. to noon.  And don’t forget your pre-orders for Saturday pickup!  We’ll see you at the Market!

Eggplant Parmesan Sliders

Eggplant Parm Sliders

INGREDIENTS

  • 4 Roma tomatoes – cut in half, stems removed
  • 2 Tbsp brown sugar
  • salt and pepper as needed
  • olive oil as needed
  • 1 eggplant – ends removed, cut into equal rounds
  • kosher salt as needed
    (roughly 1/2 tablespoon)
  • 1 c. Italian breadcrumbs
  • 1 egg – beaten
  • canola oil for frying
  • 1 round burrata cheese
  • fresh basil
  • 2 Tbsp butter
  • 1 clove garlic, minced
  • 4 buns

INSTRUCTIONS

  • Preheat oven to 350F.
  • Coat tomatoes in just enough oil to give them a nice rub. Toss in brown sugar and a sprinkle of salt and pepper. Place on baking sheet and bake for 1 hour until skin is wrinkly and tomatoes are nice and juicy.  Set aside to come to room temperature. 
  • Meanwhile, generously salt each eggplant round on both sides. Allow to sit and sweat for thirty minutes.
  • Rinse eggplants completely and dry.  
  • Gather your dipping station with the beaten egg and breadcrumbs.
  • Add enough oil to coat 1/2″ of a frying pan and heat to medium heat. Oil is ready when a few crumbs dropped in sizzle.
  • Dip eggplant rounds into egg, then  crumbs, then carefully transfer to hot oil and cook 1-2 minutes on each side until browned.
  • Transfer to a plate lined with a paper towel and repeat.
  • Melt butter in a small saucepan and add minced garlic. Brush onto each half of buns and toast for 1-2 minutes.
  • Layer buns with cheese and eggplant/tomato/basil

Fun Facts About … Strawberries!!

Did you know that strawberries are not technically berries?  Berries have their seeds on the inside.  But, strawberries have their seeds on the outside.  Technically, it is each tiny seed that is the “fruit” of the strawberry plant (and a single strawberry can have up to 200 seeds)!  The yummy, fleshy part that we eat is just the receptacle for the “fruit.”  Fascinating!  Strawberry season is moving north, so while we’ve all been enjoying the strawberries from our Northern Neck, Virginia, farmers — Barajas and Linda Vista, — our Pennsylvania vendors — Twin Springs and Kuhn Orchards — have strawberries coming in season now too.  So, more strawberries for everyone!!  Come and get ’em at Barrett Elementary School on Saturday, June 5, from 8 a.m. to noon.  And don’t forget your pre-orders for Saturday pickup! We’ll see you at the Market!

VENDOR PROFILE

Located in Arlington, Virginia, Roots ‘n Shoots is a woman-owned, small business that provides microgreens and garden plants for the DC, Northern Virginia, and Maryland area.  If you haven’t yet discovered the nutritional value and just plain deliciousness of microgreens, then you are in for a treat!  Microgreens are tiny, nutritious, and delicious vegetables that add beauty and flavorful interest to just about any meal. They are harvested just before or as the first true leaves emerge, so they pack all that color, taste, and nutrition into their miniature version. They are extremely versatile. Popovers with Strawberry Butter

Too much of a good thing?  Eyes bigger than your stomach?  Strawberry Butter is a great way to use up those overripe strawberries.

INGREDIENTS

FOR WHIPPED STRAWBERRY BUTTER:

  • 1 stick unsalted butter, at room temperature
  • 1/3 cup mashed fresh strawberries
  • 2 Tablespoons powdered sugar

FOR POPOVERS:

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups whole milk
  • 3 large eggs
  • 1/2 teaspoon salt
  • 2 Tablespoons unsalted butter, melted
  • 2 Tablespoons unsalted butter, cut into 12 even pieces

INSTRUCTIONS

FOR WHIPPED STRAWBERRY BUTTER:

  • In stand mixer fitted with a paddle attachment, whip softened butter with mashed strawberries and powdered sugar until well blended, about 3 minutes.
  • Serve immediately or cover and refrigerate for later use.

FOR POPOVERS:

  • Preheat oven to 400ºF.
  • In a large bowl, whisk together flour, milk, eggs, salt and melted butter until it is the consistency of heavy cream.
  • Place empty 12-cup popover pan (or muffin tin) in oven for 2 minutes to heat it.
  • Remove heated pan and place one cube of butter in each cup.
  • Divide batter into cups, filling each half full.
  • Bake popovers for 20 minutes.
  • Reduce heat to 300ºF and bake an additional 10 minutes.
  • Remove popovers from oven and serve immediately with prepared butter.

Cicada Season!

In case you missed it (really, how could you?), the cicadas have arrived!  And, boy, do they make their presence known!  Did you know that cicadas are considered good luck in the south of France!?  Me either!  But our own amazing Chef Patrice assures us it is true, so let’s enjoy the little buggers and appreciate the luck they apparently are bringing our way.  Stop by J’aime Madeleine to grab a cookie (or a dozen!) and hear all about it!  Watch the cicadas fly (and pick up your goodies for the long weekend) at Barrett Elementary School on Saturday, May 29, from 8 a.m. to noon.  And don’t forget your pre-orders for Saturday pickup!  We’ll see you at the Market!

Loosening COVID-19 Restrictions!

With the recent announcements from the CDC and the Governor, the Lubber Run Farmers Market is loosening a few restrictions for this week’s market.  Please be patient with us; we’re doing our best to keep up with the rapidly changing environment while making sure that we are compliant with all relevant laws and maintaining a safe and healthy market space for our community.  Starting this weekend, consistent with CDC and Virginia guidance, facial coverings remain required for vendors, but are no longer required for those who have been fully vaccinated.  At Virginia farmers markets, however, facial coverings remain recommended for everyone, regardless of your vaccination status.  We know some of you have continuing safety concerns, have vulnerable family members at home, or just love to show off that new fashion accessory, so if you want to mask up, please do!  Eating and drinking is not yet allowed in the market space, but you are welcome to have your snack on the grassy areas behind the Market or in the areas at the front of the Barrett school outside of the Market’s entrance gates.  We will continue to require one-way flow through the Market as physical distancing requirements have not yet been lifted for farmers markets, so please exit the Market area through one of the three marked exits and circle back around to the entrance if you would like to re-enter.  Like we said, we’re doing our best!  More changes likely in coming weeks so stay tuned!  In the meantime, please come enjoy the great outdoors and get your shopping done at Barrett Elementary School on Saturday, May 22, from 8 a.m. to noon.  And don’t forget your pre-orders for Saturday pickup!We’ll see you at the Market!

  • All customers should enter the market through the Barrett School parking lot entrance closest to N. Henderson.  Only one-way traffic will be allowed in the market with the exit at the end of the market at N. Park (additional “quick exits” are marked).  Once they have completed their shopping, customers can return to the entrance via the sidewalk near the school behind the vendor tents.
  • Market staff and volunteers will be monitoring how many customers are in the market at any one time in order to comply with physical distancing rules.  Please be patient as there may be an appropriately-spaced line to enter.
  • Customer may select their own produce but discussions with individual vendors should be in compliance with the 6-foot physical distancing rule. 
  • Please no eating or drinking in the market.  Customers should pick up prepared foods and exit the main market area before removing your face covering to consume your goodies.

Faerie Springs Farm
Faerie Springs Farm is a family operation raising animals and making farmstead cheeses in a sustainable and ethical program which honors the special function and lifestyle of each animal.  Faerie Springs milks Jersey and Holstein Milk cows, and Nubian, Saanen, Alpine, and Toggenburg dairy goats.  Below is a picture of Hashbrown, recently featured on Faerie Springs facebook page (need pictures of adorable goats, look no further!).  Hashbrown is a Nubian goat, and his mother, Muffin, is a milker.  So, help the cute little girl out and try some of her mama’s cheese at Faerie Springs this weekend!  Place your pre-orders here.  (Legal Disclaimer:  We cannot guarantee that the cheese you select will actually contain Muffin’s milk, but we can guarantee that it will be delicious!)

Pork Tenderloin Medallions with Strawberry Sauce

Pork Tenderloin Medallions with Strawberry Sauce

Ingredients:

  • 1-1/2 cups reduced-sodium beef broth
  • 2 cups chopped fresh strawberries, divided
  • 1/2 cup white wine vinegar
  • 1/4 cup packed brown sugar
  • 1/4 cup reduced-sodium soy sauce
  • 3 garlic cloves, minced
  • 2 pounds pork tenderloin, cut into 1/2-inch slices
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons canola oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped green onions

Instructions:

  1. In a large saucepan, combine broth, 1 cup strawberries, vinegar, brown sugar, soy sauce and garlic; bring to a boil. Reduce heat; simmer, uncovered, 15 minutes or until slightly thickened. Strain mixture and set aside liquid, discarding solids.
  2. Sprinkle pork with garlic powder, salt and pepper. In a large skillet, heat oil over medium heat. Brown pork in batches on both sides. Remove and keep warm.
  3. Add broth mixture to the pan; bring to a boil. Combine cornstarch and water until smooth and gradually stir into skillet.
  4. Return pork to the pan. Bring to a boil. Reduce heat; cook and stir 2 minutes or until sauce is thickened and pork is tender. Top each serving with cheese, onions and remaining strawberries.
